• Simple meals that are vegan, no salt, no oil, low sugar

    I've had digestive issues for a long time and also have struggled losing weight. I've found through the process of elimination that my body is much happier on a vegan diet that also is low/no salt, oil and sugar. Any simple meal and snack suggestions to get me out of a junk food vegan rut? (PS my B12, Omega 3, and Vitamin D levels and other bloodwork is regularly monitored by my doctors so I'm not concerned about that aspect of veganism).

    I bought this cookbook called Oh She Glows when I first went vegan. Really awesome recipes that you can easily adapt to eliminate oil and salt. She has a blog too if you aren't sure about the book. My go-to meals usually involve a lot of veggies and beans. Quinoa with veggies and chickpeas or tofu is always good. Sweet potatoes are super adaptable and easy to make (I bake them and eat them as chips -- no salt needed). Chickpea salad is also really good -- I make it just like you would make tuna but with mashed chickpeas and vegan mayo. Soup is also a good option too.

    As far as snacks go, I bought a dehydrator a while back and it has been great. I make my own veggie chips and fruit chews. That way you know exactly what's going into your food. And it's pretty low effort -- juts like a slow cooker. Hummus and cut up veggies is always a great option too.

    My boyfriend is vegan. I am learning the vegan lifestyle which I find really good, I have lost weight and feel healthier. I find all my recipes on Pinterest. Lots of great recipes!!

    ChefAJ.com, Chef Ramses Bravo, Katie Mae, and Cathy Fisher all have SOS free vegan recipes. I also like "TheVegan8.com" but may have to remove salt and sugar. Using a search engine to find a particular recipe has also worked for me. I type in vegan no oil ____ and get several choices. I substitute dates for sugar sources. If you are trying to lose weight you may want to look at calorie density. Jeff Novick does a good lecture on how to use his calorie density chart to keep from being hungry and still eating fewer calories. Potatoes are a less dense starch than rice for instance. Just that one change worked for me to get my weight to start coming off.
